- 800 grams of zucchini
- Salt and pepper
- 3 eggs
- 8 egg whites
- 3 cups of unsweetened almond milk
- 1.5 teaspoons fresh thyme (chopped)
- A few broken basil leaves
- 75g grated fat-free cheddar cheese
- olive oil cooking spray
Instructions for preparation:
Heat the oven to 190°C. Then bring a large pot of salted water to a boil and add the courgettes to blanch for one minute. Drain and spread to cool on paper towels. Salt and pepper lightly. Beat the eggs and whites with the almond milk and ¾ teaspoon of salt. Then add the nutmeg, thyme and basil leaves before mixing well.
Spray a baking dish with olive oil spray and place the blanched courgettes on the bottom. Spread shredded fat-free cheddar cheese on top, and finally pour the egg mixture over it. Bake for 35-45 minutes or until a toothpick inserted comes out clean. Let cool to room temperature before serving.
Zucchini flan with mint for all occasions!
To prepare the following light zucchini flan recipe, first obtain the ingredients listed below:
- 2 eggs
- 100g cottage cheese
- 2 large zucchini
- 70g of flour
- 1 sachet of yeast for savory tarts (not brewer’s yeast)
- Salt and pepper
- some mint leaves
- grated parmesan to taste
First, preheat the oven to 180°C. Wash the courgettes and cut them into small cubes. In a small bowl, beat the eggs with the cottage cheese, salt and pepper. Add the sifted flour and baking powder, then the courgette. Mix everything well. Finally, add the previously washed, dried and chopped mint leaves. Pour the preparation into a round cake mold (22 cm in diameter) previously lined with baking paper. Finally, sprinkle with Parmesan cheese and bake for about 25-30 minutes.
Indian Spiced Zucchini Custard Recipe
The following light zucchini flan recipe promotes Indian cuisine with unique flavors like curry and turmeric. Check out the full list of ingredients below:
- 200 ml of coconut milk
- 250ml soy milk
- 100g courgette
- 2g agar agar
- 1 teaspoon yellow curry paste
- 1/2 teaspoon turmeric powder
- Salt and pepper
- Olive oil
In a hot pan with oil, fry the courgettes cut into thin slices, lightly salting. Next, pour the coconut milk, soy milk, curry paste and turmeric into a saucepan. Add the agar-agar and bring to a boil. Let boil for 2 minutes. Remove from heat, salt and pepper. Transfer the mixture to a blender, add the zucchini and blend. Divide into small ramekins, cool to room temperature, and refrigerate at least 2 hours before serving.
Zucchini flan to prepare the day before
First start by heating the oven to 180°C. Next, cut 400g of well-washed courgette into thin slices and cook in boiling water for 15 minutes. In a large bowl, beat an egg with 165ml milk before adding 30g grated Parmesan and a pinch of nutmeg. Finally add the cooked zucchini and mix well.
Get a large baking dish (or two smaller ones), sprinkle it with breadcrumbs, and pour in the zucchini mixture. Sprinkle with Parmesan cheese and bake for 30 minutes. Let cool to room temperature and enjoy your light zucchini flan without remorse!
