With very little technique, you can turn courgettes into a tasty and refreshing summer dish. This lemon thyme zucchini tagliatelle recipe is typically seasonal and can even be 100% homemade if you’re lucky enough to have a vegetable garden.

  • 1 lemon
  • 2 sprigs of thyme
  • Olive oil
  • Salt and pepper

Prepare zucchini noodles seasoned with thyme and lemon

  1. Start by washing the courgettes well and removing the ends. Grate the zucchini with a cheese grater or food processor if you have one, trying to get long, thin pieces.
  2. If you want to do it by hand, cut the zucchini into thin strips lengthwise with a hand peeler; it takes more time, but the result will be worth it!
  3. Once you have your “tagliatelle”, place them in a colander and sprinkle them with a little salt. This will remove excess water from the zucchini. Let sit for 10 minutes and then rinse with cold water. Let your zucchini tagliatelle drain well.
  4. In a salad bowl, mix the lemon zest, the juice of half a lemon, the thyme leaves (discard the stems), 3 tablespoons of olive oil, salt and pepper. Add the zucchini tagliatelle and mix well.
  5. Serve immediately or for added freshness, refrigerate for an hour or two before serving.

You can add many other ingredients to your courgette tagliatelle according to your tastes: black olives, cherry tomatoes, feta cheese, mozzarella, basil or mint instead of thyme, pine nuts, etc. It is also possible to sprinkle the zucchini tagliatelle with Parmesan.
